Whole Lamb Shoulder cooked in Penang Curry with Peanuts

Instructions
Preheat oven to 170ºC
Place lamb in oven with foil still covering and cook for 45- 1 hour or until hot to the centre
Remove foil and turn oven up to 200c, caramelise lamb for a further 15 minutes
Heat up panang curry in a pot or microwave
Remove lamb from oven and place onto a serving platter, pour over curry and garnish with toasted peanuts.
